Try this recipe that came from a County Extension Office article published October 1984. Pumpkin Cheese Ball: One package (eight ounces) cream cheese, softened. 1/2 cup solid-pack pumpkin. One jar (2-1/2 ounces) dried beef slices, chopped. Two cups (eight ounces) shredded sharp Cheddar cheese. 1/4 cups crushed pineapple (well drained). One tablespoon chopped onion. Short celery stalk. Parsley for garnish.

Combine cream cheese and pumpkin, mixing until well blended. Stir in beef, cheese, pineapple and onion; mix well. Chill at least one hour. Form into large ball. Score sides with knife to resemble pumpkin. Garnish with celery for stem and parsley. Serve with crackers. Yields about 2-1/2 cups.
