Diabetes

I read in the newspaper where people are told to read the labels of the products they purchase to be sure they are made in the USA. If this is you, be thankful and look around the store, and you will see many shoppers not only checking the label but scrutinizing the ingredients as well.

When diabetics shop, they must be very cautious, not only where the food was packaged, but whether they are able to eat the product without sending their sugar over the range.

I have made the mistake of sending for recipes for diabetics from the county and state, and even these people do not realize the problems since the recipe calls for sugarless pudding, but ends by telling you to then place it into a graham cracker crust. Graham crackers themselves have plenty of sugar, but then when sugar and shortening is added to make the crust, you have a high sugar product.

My husband was buying "Murry" cookies with the words "sugar free" in large type on the front, but when you read the ingredients, they aren't sugar free at all and now they have came up with a new way of hopefully fooling you by adding "sugar alcohol." I called our teacher of diabetics and our family doctor asking what sugar alcohol is, and both assured me it was simply sugar. So now I have gone back to baking cookies sweetened with aspartame and muffins and pies.

We are very careful about purchasing canned fruit "in water," and with peaches and apricots we encounter a very small amount of sugar. But my husband loves cherry pie, so when he saw cherries canned in water, he just took it for granted that they must be low in sugar. Wrong. They were high in sugar, but in the grocery we shop at is very nice about exchanging things you have mistakenly purchased. We now have cherries to return for peach or apricots.

Much of the information out there is screaming we have a diabetic 2 epidemic, but no one is offering any help to the diabetics that have it. If this disease is new to you, do read those ingredients continually, since they change frequently where sugar and carbs are concerned.
