Hogs R Wild BBQ Full Of ‘Passion’

Owner Mark Poling said barbecue is a passion of his. “I love cooking, I love making people happy,” he said.
He said the passion transfers to his food.
“I definitely do high quality. I don’t skimp on any of the meats. I use all high-quality products. I use all wood. I don’t use gas or electric. Everything is all natural,” he said. “I feel you can definitely taste the difference in my food.”
There’s a lot of styles of barbecue, and wood fire is the type of style he said he likes to bring to Warsaw.
Hogs R Wild is open Thursday to Saturday, 10 a.m. to 8 p.m., or until food is sold out. The reason for that, Poling said, is there’s a lot of prep work that goes into making things fresh every day.
“Everything is serve to go. We have a couple bar seats (in the restaurant). But other than that, it’s serve to go. We try to cycle as many people out until it’s gone and then we start fresh the next day,” he said.
The goal is to sell out every day, which it does almost every day it’s open, he said. They try to last as long as possible during the day and don’t reheat food.
Poling said he has already gotten good feedback, and there’s already people that come every single day Hogs R Wild BBQ is open.
“We’ve got many customers that have never had our food before,” he said.
Poling’s food is not exactly new to the area, as he has a food truck that he used for 4-1/2 years prior to leasing the building at 1527 N. Detroit St., Warsaw. He used the food truck for events, festivals, First Fridays, etc. in the county.
“We weren’t permanent anywhere, we were mobile,” Poling said.
He said he was looking for a permanent location for quite some time.
The food truck is still going to be in use, being sent out for things like events, festivals, First Fridays and certain things at Tippy Creek Winery, he said.
Some of the things on the menu include baby back ribs, $11 for half and $20 for full; pulled chicken sandwich, $6; pulled pork sandwich, $6; chopped brisket sandwich, $8; pulled pork egg rolls, two for $5; and buffalo chicken wontons, seven for $5.
