The former Long John Silver’s building in Warsaw will soon become a Chicago-style beef restaurant with an array of menu options.

Dan Signore, owner of the Barbee Hotel and Danny’s Sports Bar, purchased the old Long John’s building at 2601 E. Center St. in February.

“I kinda was always looking to kind of do another venture and I’ve been looking for a location for quite a bit of time,” Signore said. “That location caught my eye because it had a drive-thru and the location’s pretty good, so I decided to negotiate to purchase it.”

He said he plans to fix up the outside of the building with a new paint job, more lighting, fix the parking lot and add new signage. Inside, Signore’s going to remodel the dining room and kitchen.

“It’ll be fast food-ish with some healthy choices,” he said of the menu. “Italian beef, hot dogs, hamburgers, salads, wraps, pizza by the slice, Italian sausage. Those are just some of the items, and we might have gyros. We’ve been having a lot of requests for gyros.”

Those requests have been flooding in after Signore posted on the Kosciusko Chamber of Commerce’s Facebook group “To Go Kosciusko.”

The Chamber put the group together when Indiana Gov. Eric Holcomb ordered bars and restaurants close to dine-in patrons to help slow the spread of coronavirus.

“We had like 400 comments, and it was a really nice response,” Signore said of his post lighting up within 24 hours of his announcement. “I read them all to make sure what people were looking for, and the gyros thing really popped out and some people wanted to make sure we have some Indiana specialities like a tenderloin, so we will most likely offer that, too.”

Signore described himself as “kind of a foodie” who always cooked with his mother. He’s from Blue Island, Ill., which sits on the south side of Chicago.

He purchased the Barbee Hotel in 2006, and after remodeling the downstairs, he started remodeling the second floor into what it is now – Danny’s Sports Bar.

Signore said he’s not sure when exactly he’ll open for business at his new location, but he’s shooting for late fall, although it might be a little later than that.

And as far as the name, he said, “It’s gonna be Danny’s something. A lot of people already come and eat our pizza and know our name.”

Signore said he’ll be putting up a Facebook page in a couple of weeks to post updates.
