On Thursday, the Kosciusko Chamber of Commerce had a ribbon-cutting for the restaurant’s new owners.
In an interview beforehand, Casey explained, “I had worked as a consultant with Subway franchisees so I knew Marilyn (McDonald) through that.” McDonald is the former owner of the Silver Lake Subway.
“So we had a relationship already kind of built in and we were kind of talking in and out, and she was mentioning some frustrations that she was having. It just kind of worked itself out that way.”
He said he and she both know that staffing is kind of hard nowadays.
“A lot of people are pulling their hair out, so we had an opportunity to come in and we’ve been looking for an opportunity like this for 10 years, and we had an opportunity to come in and just be a part of such a cool community,” he said.
Casey and Bethany, who live in Pierceton with their two children, are both from Kosciusko County and graduated from Warsaw Community High School. Bethany is a doctor of veterinary medicine at Animal Hospital of Syracuse.
“We’ve got a lot to be thankful for,” he said.
Wednesday was the Couture’s official first day as owners.
“Today was just an opportunity to really just get out and talk to people and just get involved. We’ve been really busy in our careers and stuff. She’ll continue to do what she’s doing over at Animal Hospital of Syracuse, but (we’ll) be able to get out and just work within the community,” Casey said.
He said with the staffing issues companies are experiencing, it’s hard for businesses to do community outreach.
“Fortunately, the staff in here, they’ve been here for quite a while. There’s 20 years of experience between Mariah (West) and Becca (Ballard) alone, and we hope that’s going to give us a chance to look at the business and see how we can provide for the community,” Casey said.
He said Subway has a “big brand refresh” that’s going to hit in June.
“We’ll have a remodeled store sometime at the end of next year, is what we’re projecting, which is exciting. She (McDonald) has kept this place in great shape. It’s a 10-year-old building internally,” he said.
There’s also some new menu items at Subway.
“Subway has been marketing ‘fresh,’ ‘new’ - new turkey, new ham, new steak - a lot of different items. Bringing back mozzarella cheese, bringing back a garlic aioli sauce, which we are really excited about,” Casey said.
Not a lot of Subways offer a Flatizza (a flatbread pizza), he said.
“When I go into a Subway with my kids, it’s hard sometimes because they want pizza. So we sell pizzas here. We offer those type of items that a lot of Subways don’t, which I think is really cool,” he said. “When my 5- and 8-year-old are coming in and if they don’t feel like a sandwich, they have other options, which I thought was cool.”
Subway offers breakfast, opening at 7 a.m. and closing at 9 p.m.
“If you haven’t been in the Silver Lake Subway, I think you can see the difference in what you find at other restaurants. It’s hard to find good service these days, and we aim to offer that,” Casey concluded.
