After working in the RV manufacturing industry at Keystone, Cornelius Watkins and his wife Kayla decided to go into business for themselves for their children.

Thursday afternoon, the Kosciusko Chamber of Commerce held a ribbon-cutting ceremony for Big C’s BBQ & Catering during the Chamber’s After Hours event at Woodland Plaza, 3636 Commerce Drive, Warsaw.

“I wanted to create something for my children. I’ve been in the field of working for other people. It’s better to have your own. Why not? If you can build it and do it, why not? I did it and this is for my children,” Cornelius said.

He said they started their business in July 2020.

“We started in Milford and Syracuse, and we stayed there. We sprinkle over here every now and then,” he said.

Kayla said they’re just a two-man team right now, but hopefully over the next couple of years, they’ll be able to expand and grow. They live on the south side of Goshen.

Cornelius said the most popular item from his food truck was between the pulled pork mac & cheese and the tacos. The chicken wings were probably a close third.

“Ribs are up there with everything else,” Kayla said.

Their main items on the menu includes ribs, chicken wings, pulled pork sandwiches, pulled pork tacos and pulled pork mac and cheese. There’s also the Chicago-style hot dog that has onions, tomato, relish, pickle if you want, mustard and a celery salt.

Being from the west side of Chicago originally, Cornelius said food has always been a big thing for him.

“You can go anywhere and try anything great in Chicago, so I wanted to bring that here,” he said.

He said he definitely wants to bring Chicago taste more this way, but he was taking his time.

Business, he said, “has been pretty solid. Pretty steady. We’ve been busy since Super Bowl this year.”

“We’ve really grown this year a lot,” Kayla said.

“If anybody wants to start a business, just do it. Seriously. Figure it out and make it happen,” Cornelius said.

Kayla said, “He completely built our trailer by himself.”

As of Thursday, they’re scheduled to be at the Oakwood Resort Fine Arts Festival in Syracuse from 11 a.m. to 4:30 p.m. Saturday; Milford Dollar General June 17-18, 24; and at the Syracuse Last Friday on June 25.
