Roll-N Smoke BBQ Began In A Truck

Owner Randy Gregory started the business with a food truck in 2018. On March 6, 2020, the business opened in the building across from Pilcher’s Shoes, right before the pandemic.
“We offer authentic smoked meats, such as pulled pork, brisket, ribs and chicken,” he said. Sides include Mama’s Homemade Tater Salad, homemade mac & cheese, smoked mac & cheese, homemade cole slaw, baked beans, fries and onion rings. “My own recipe. Not my own sauces. There are plenty of sauces out there so I don’t need to remake any.”
There’s a rumor that Roll-N Smoke has some of the best barbecue around. Gregory responded, “I like to say that mine is the best barbecue in Indiana.”
The staff is small with four people running it, with Gregory and his wife owning it. His wife still works full-time as the store manager at Burger King in Syracuse. When she’s not there, she’s helping Randy run Roll-N Smoke.
Before starting the food truck in 2018, Gregory said they had been doing “on the backburner for many years for just family and friends. The company that I worked for went global and they were restructuring. So, I knew I was getting the hatchet sooner or later. I put 18 years in there, and I talked it over with the wife and told her we needed to do this barbecue thing. It’s been a dream of mine for years, and we needed to at least try it on a big scale.”
When he left the company, he bought the food truck and smoker “and everything else is history. It has absolutely snowballed ever since,” he said.
They’ve lived right outside of the town of North Webster for the last 18 years, and five or six years in Syracuse before that.
When he was looking for a kitchen to move his business to from the food truck, he came across the building at 108 E. Washington St. It didn’t have a kitchen in it, but Gregory installed a kitchen and got it approved by the Kosciusko County Health Department. “And here we are.”
The food truck is still used for events like weddings, graduations, personal parties and other get-togethers. They can be found at Tippy Creek Winery quite a bit.
Any shoppers or car show spectators who get hungry on Dixie Day, Saturday, July 31, will be able to find Gregory cooking up some barbecue. “They’ll smell me!” he said.
Roll-N Smoke offers dine-in and carry-out, but Gregory said about 85% of his business is carry-out. Call in ahead of time to order at 574-529-1261 or just stop in.
