Kosciusko Chamber of Commerce held a ribbon-cutting ceremony Friday for Shawnanigans.

Shawnanigans has been in business for almost three years, said Shawn Bianchini, who owns the business with his wife, Carrie.

“We started out as a catering company and we did that for the year and a half, two years, and when COVID hit, all of our caterings cancelled, so we kind of decided to do a pivot and figure out what we could do, so we started doing the pop-up setups under a canopy tent. And that went really well for us. It boomed,” Bianchini said.

An opportunity to buy a food truck “presented itself” and the Bianchinis bought the food truck and now operate it as part of their business.

The Bianchinis started doing the tent canopies in April and bought the food truck about two months ago.

Bianchini said the food truck is “going really well” and “now our primary focus is doing the food truck stuff.”

Bianchini said Shawnanigans still offers catering, which is picking up again.

“We are starting to see people get a little more comfortable with having events, or as people begin to get back to work and employers want to treat their employees, we’ve started to get some caterings back. And we are booking caterings, we are accepting caterings, and we love doing them, so just give us a call and we’d love to get something scheduled,” Bianchini said.

He said anyone interested in catering from Shawnanigans can find their information on www.shawnanigansllc.com. If people stop at one of Shawnanigans’ food truck setups, “we have all of our information ready to go.”

Bianchini said Shawnanigans is at the Kosciusko County Courthouse every Friday for lunch, KeyBank every second and fourth Wednesday of the month and “then other than that, we’re pretty active.” People can find of where the food truck is by checking the website or Facebook page.

For their menu, Bianchini said they wanted to do a premium food truck.

“We looked at doing upscale cuisine in street food fashion and that’s really what we strive for. We strive to do everything homemade as much as we can and we strive to be able to serve really good food,” Bianchini said.

For the food truck, Bianchini said Shawnanigans always has a bison burger on its menu “and it is 100% bison,” which has a speciality prep to it. Other menu items for the food truck include a grilled bacon jam and cheese sandwich, a spicy sprout cheeseburger and five cheese mac and cheese.

Bianchini said parts of the food truck menu rotate each month.

According to their catering menu, catering items include hanger steak, hamburgers, meatballs, beef stroganoff, chicken carbonara, chicken lasagna, broccoli salad, bone in pork chops, pork lasagna, brownies and fruit cobbler.
