Mark Poling, owner, said Hogs R Wild was a food trailer for five years before moving into the building at 1527 N. Detroit St., Warsaw, earlier this year.
“We are open. We’re open Thursdays, Fridays and Saturdays, 11 a.m. to 7 p.m. or sell out,” he said.
As for the menu, Poling said, “We serve all fresh wood-fired barbecue. So we don’t use any gas or electric in heating. Our smokers are all fed by wood. We make it fresh every day. Chicken, pork, brisket, ribs. We do a little bit of everything. We’ve got egg rolls made out of pulled pork, coleslaw. We’ve got buffalo chicken wantons made out of buffalo chicken dip. Deep fried wanton wrappers. We just do a little bit of everything. Loaded potatoes. It’s all based back at the original barbecue.”
He said customers seem to favor the brisket and ribs and pork, but many like the chicken, too.
“They eat it all,” he said.
Poling said Hogs R Wild BBQ has five people that help out, but doesn’t have any employees really because it’s all family.
“We’re keeping it very small as of now,” he said. “Right here is all we want. We’re just trying to do what I want. I work for myself now, doing what I love doing. It’s my dream to have a barbecue joint and feed the community and work for myself, so that’s what we’re doing.”
During the COVID-19 pandemic when restaurants had to close down, Poling said they stopped for about a month, but did home deliveries. Other than that, he said they’ve been opened the rest of the time and work hasn’t seemed to have slowed down.
“It’s mostly a first-come, first-serve basis unless you’re wanting catering for a weekend following or two weeks ahead. Go ahead and message us and we’ll work it out,” Poling said.
He said they do lots of catering for events like weddings, graduations and “all sorts of events.”
