Classic Comfort Food, Unique Decor Combined At Warsaw’s Palette, An American Eatery

Longtime hotel owner Bruce Shaffner is a Warsaw original, and he wanted to create a unique restaurant with classic American comfort food.
“The name Palette really is a description of two things: one being the palette of your taste suit, the other of an artists’ palette. So it’s got everything from sandwiches all the way to steaks, pizza and lots of appetizers,” Shaffner said. “It’s an American restaurant with a wide variety of menu options.
“The interior of it is done more of a color palette, there’s a lot of color to the interior of the restaurant. It’s a fun place to come.”
The restaurant is hardly Shaffner’s first enterprise.

“My brother and I went into business 37 years ago,” he said. “We opened what was, at that time, Viewpoint on the Lake, which a lot of people would remember that. We were there about 16 years, until we purchased the hotel about 21 years ago.
“When we bought the hotel we started with our own restaurant in there, then we leased out the food and beverage operation to Bennigans, and they were in there for approximately 15 years. It’s been a couple of other things since then, but we’re excited about Palette.”
Shaffner isn’t afraid to try new things, but sees the wisdom in keeping some of the tried-and-true things close at hand.
“Some of our recipes at Palette are from the restaurant we had back at the Viewpoint. We have a few of those old-fashioned favorites that people liked and we brought back,” he said.
